I feel inspired to bake something every time I go on instagram. I had no idea there were so many ways to use pumpkin spice.
Matt and I are on a low sugar, mostly vegetarian kick these days so I’ve been experimenting with sweeteners again, specifically dates. I started using dates in the kitchen in my favorite smoothie recipe and I’ve since realized they make the perfect sweetener for baked goods, too!
To make bake with dates, all you need is date purée, which is just dates + water. That is all.
So simple, so pure, so sweet.
I like this sweetener because it’s “whole foods” product. It incorporates the fiber from the dates which should slow the release of sugar into your bloodstream, reducing blood sugar spikes. I would guess that you could use date purée in any recipe that calls for sweetener, but it would probably take a little experimenting to figure out exactly how much.
To make the amount I wanted for this recipe, I soaked 8 dates in a bowl of hot water for 15 minutes. After 15 minutes, Ipuréed the dates with 1/2 cup of soaking water and yielded about 1/3 cup of liquid purée. If you use less water, you’ll have more of a paste vs. purée….
