This week has been challenging.
If you follow along on Instagram, you know we gave our foster pup up to her forever home. We had her for barely a week but the whole experience of pulling her off death row, finding her a home, having her returned to us, and then finding her forever home worn on our hearts. We actually would have been a #fosterfail had her adoption not worked out yesterday. You can read her whole story here.
This weekend I have plans to attend the UCF game with my girlfriends – thank you Kimberley for the invite! It’s a night game so the bulk of my Saturday will be spent preparing for the game, better known as tailgating.
I’m a big proponent of good eats while tailgating. It’s an absolute must. I think it’s important to have a good balanced breakfast before tailgating so that I don’t over do it with snacks. My favorite breakfast lately is 3-ingredient Protein Pancakes. Pancakes, made the real way, are obviously amazing. BUT, they are incredibly filling and often make me feel weighed down, not ideal when I have big food/drink plans for the day.
This version is much lighter and can be topped with your favorite nuts or seeds for even more protein. …
