I hope you had a wonderful weekend. My weekend was as busy as I expected it to be. The Chili Cook Off took up my entire day on Saturday. It was busy, hectic and a huge learning experience. I’m sad to report we didn’t win. Not even for decor. And our decor was so cute:
My Sunday included freaking out about Daylight Savings time, brunch with a good friend and some shopping. DST snuck up on me this year. I actually had no idea that it was happening over the weekend until I saw a post on Facebook right before bed. Facebook saves the day, again.
I also spent some of my Sunday watching Orlando City Soccer play their inaugural game. It’s really exciting to have an MLS team in my city! I wouldn’t say I’m a huge soccer fan, but having a hometown team is definitely incentive to get into soccer. I was still pretty beat from Saturday so I didn’t end up having a taco feast with my family. We’re going to reschedule for sometime this week.
Let’s move on to more important things: Meatless Monday. I always feel like I need to prepare and share an entrée for Meatless Monday but today, I didn’t do that. I’ve been getting so much delicious citrus that I’m sharing a smoothie recipe instead. And if you have this for breakfast, it counts as an “entrée” – right?
- 1 Small banana (under 7" long)
- 1 Medium sized navel orange
- 2 Strawberries, tops cut off
- 1.5 cups of unsweetened vanilla Almond Milk
- 1 serving vanilla protein powder
- 1 cup ice
- Blend all of the ingredients in a high powered blender.
- Add additional ice as needed.
- Serve and enjoy immediately.
Now that it’s warming up again smoothies are in regular rotation. I love my standard blend of blueberries, greens and banana but I wanted to switch it up. I was inspired by Ashley’s Mango Dream Smoothie a few weeks ago.
Vitamin C is a fantastic antioxidant. It finds and scoops up free radicals that are causing and contributing to inflammation in your body. This smoothie does have sugar in it, approximately 12g per serving from both the banana and orange. This is much better than the amount you would find in one glass of highly processed orange juice. Plus, we added protein, which balances out your blood sugar. I find real orange juice and oranges to be so refreshing. It’s the perfect way to start a hot and sticky Florida morning.
