Happy 6th of July! (It just doesn’t have the same ring to it as ‘Happy 4th of July!’)
Another holiday weekend in the books! I hope yours was filled with good company, a few fireworks and a heaping helping of gratitude to those who have given their lives to protect our freedom.
This weekend started with a trip to the beach for Matt and I. We enjoyed a few hours of lounging in the sun and soaking in the saltwater. On Saturday we headed to my sister’s house for a pool party. Playing in the pool took me back to my childhood; I would say that I spent the every summer between the ages of 4-18 in the pool. My cousins, my sisters and I would make the pool our sanctuary. We spent hours upon hours in the pool and those memories always make me smile.
As an adult, spending time in the pool is still just as refreshing. This weekend I was reminded of how much fun it could be. While in Vegas, pool time involved lots of frozen beverages, so I can fully appreciate their place at the pool. If you’re looking for a new frozen summer beverage, might I suggest a Pina Colada Smoothie? This guilt free beverage will remind you of your favorite tropical drink, sans the alcohol.
- One medium ripe banana
- 1 cup frozen or fresh pineapple (without added sugar)
- ½ cup coconut cream
- 8oz coconut milk
- Your favorite vanilla protein
- Water and ice to desired consistency
- Combine all of the ingredients and blend.
I love using coconut cream in recipes because of the benefits it provides. Coconuts do contain significant amounts of fat, but they are different from other nuts because provide fat that is mostly in the form of medium chain saturated fatty acids (MCFAs). MCFAs are metabolized into energy by the liver. Unlike saturated fats, it is believed that MCFAs are rapidly used and are less likely to be stored as fat. Adding coconut cream to a smoothie pre-workout or for breakfast will keep you full and give you long lasting energy.
