As you know, I’m obsessed with Costco and their amazing deals. On my last haul I picked up two jars of Kirkland organic peanut butter. Which means lots of PB&J, endless no bake cookies and now, no bake peanut butter bars!
Matt and I struggle with making time for breakfast in the morning, especially on the weekdays. We are usually in a rush and like to have grab and go items. We ran out of Perfect Bars (sad) so I got crafty with my endless supply of peanut butter.
No bake bars are the absolute best because they are so easy. I can whip them up in minutes, MINUTES! How is that for time saving?
Peanut butter and oats are a great combo for breakfast because you’re getting healthy fat, protein and fiber. This combination of nutrients will help keep you full and satisfied. Oats are a great source of protein, which you might not have guessed. These bars are the best way to get your oats on the go if you happen to forget to prep your overnight oats.
If you want a vegan version of this bar, swap out the honey and use vegan chocolate chips.
- 2 cups old fashioned oats
- ½ cup raw honey
- ½ cup organic peanut butter
- ½ cup semi sweet chocolate chips
- Combine the ingredients in a bowl and flatten the mixture into a shallow baking dish.
- Allow the mixture to cool in the refrigerator for 20 minutes.
- Use a butter knife to cut into 8 bars.
- Store in refrigerator.
