A no bake cookie is the saving grace for those nights when you want a little something sweet without any extra work! These no bake dark chocolate coconut cookies are easy to make and delicious.
When I was in college, I learned the art of dessert. I didn’t grow up in a house where dessert after meals was the norm, so when the dining hall gave me endless dessert options, my whole life changed.
Soft serve? Yes, please.
Soft serve with sprinkles? Of course!
Apple pie? Peach cobbler? Chocolate cake?
There were always so many options and it was hard to say no. Eventually I developed a terrible habit: I wanted something sweet after every meal.
This habit has been the hardest one I’ve ever tried to break.
Earlier this year when we gave up sugar, I learned first hand how hard it can be to not have “a little something sweet” after dinner. I got used to it by having fruit when I wanted something sweet.
I won’t lie, there are still days when I want something sweet and fruit doesn’t cut it. That’s when these no bake dark chocolate coconut cookies save the day. This version is sweetened by the nut butter and honey, but if you want an extra healthy version, use an unsweetened nut butter.
I used Peanut Butter & Co’s Dark Chocolate Dreams peanut butter. I think the cookies would be as good with almond butter or plain peanut butter.
- 1 cup old fashioned oats
- ⅔ cup unsweetened coconut flakes
- ⅓ cup raw honey
- ⅓ cup dark chocolate dreams peanut butter
- ⅓ cup semi sweet chocolate chips
- Combine all of the ingredients in a bowl with a spatula.
- Cool the mixture for 15 - 20 minutes in the refrigerator.
- Form the mixture into 2 inch balls and place on a cookie sheet.
- Cool the cookies for another 30 minutes and then enjoy!
We’re off to our honeymoon this week and I’m still deciding if I will post anything while I’m away. I’m leaning towards no, so that I can fully enjoy being disconnected. I think it’ll be really good for both of us.
