Paleo Mini Blueberry Muffins

Serves: 16-18 mini muffins
  • 2½ cups blanched almond flour
  • ΒΌ teaspoon sea salt
  • 1½ teaspoons baking soda
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons raw honey
  • 2 tablespoons apple cider vinegar
  • ⅓ cup frozen wild blueberries
  1. Combine your dry ingredients in a medium mixing bowl.
  2. Add eggs, vanilla, honey and apple cider vinegar.
  3. Combine the ingredients. Once combined, fold in the frozen blueberries.
  4. Use a tablespoon and drop the batter into silicon mini muffin tray.
  5. Bake at 350 for 13-15 minutes, until tops are slightly brown. Remove from oven.
  6. Allow the muffins to cool completely in the muffin pan before removing.
