Food is basically the most important part of my day. I eat. Often.
I hate getting hangry.
I haven’t participated in What I Ate Wednesday yet because I have a hard time remembering to take pictures of all my meals/snacks throughout the day. The Wellness Wednesday prompt this week had a WIAW theme, so I thought this would be a good opportunity to share what a normal day of meals looks like for me.
I usually wake up around 6:05am. Yesterday I didn’t get out of bed until 6:40am. Needless to say, it was a hectic morning. I started my day with my favorite beverage, black coffee in my favorite Starbucks mug.
I got to work around 8:00am and started my work day by reading through email and checking my company Facebook. It can be pretty hectic depending on how many emails I have. Around 9:00am I started to get hungry. For breakfast I had a serving of cottage cheese with a handful of almonds:
Around 11:00am, while working on a marketing brief about Essential Fatty acids, I got hungry again (shocking, I know). I had another handful of almonds, lovingly displayed my nerdy textbook:
At 12:30pm I decided to break for lunch. I had more of working lunch since I’m on a few tight deadlines and I enjoyed my salad at my desk.
After my salad, I decided to take a walk. Unfortunately it was raining, so my walk didn’t really pan out. Instead I sat in the lobby and enjoyed my orange with a side of Instagram.
I hit a mid afternoon slump around 3:00pm and treated myself to a cup of tea. I used Irish breakfast tea and added almond milk and a dash of cinnamon. It was as yummy as a cup of coffee.
The second part of my day passed pretty quickly and I left the office around 5:15pm. I got home about an hour later and started prepping flautas and chipotle squash for dinner. By this time, I was seriously hungry and ready for a meal. The picture is not the best, but you get the idea.
The flautas are a new thing that I’ve started making. I take a small tortilla, spread a layer of refried black beans, cheese, diced shallots, fresh tomato and jalapeño. Then I roll the tortilla, flatten it and pan sear it until the cheese melts. I like to serve it with a salsa sour cream mixture. It’s a slightly different yet delicious take on tacos.
I ended my night by catching up on The Walking Dead and Better Call Saul. If you’re not watching either or both of those shows, you’re totally missing out.

When i first started blogging I loved the idea the WIAW, but like you I could never remember to take pics of my food. Oh and I kinds “graze” throughout the day too! Have a happy wellness wednesday.
It’s so hard to remember. I usually remember after I eat whatever I’m eating lol :)
Those Flautas sound so good! My favorite meal of the day is breakfast! I could eat breakfast type food for any meal of the day.

I agree – breakfast is seriously the best meal of the day. SO MANY OPTIONS! While most people look forward to sleeping in, I look forward to weekends simply because I have the time to make a big breakfast and enjoy it at my leisure.
Mmmmmmmm flautas. Chicken tinga is perhaps one of my favorite fillings for them. I like that yours aren’t fried and are more like open burritos or whatever. noms.

I’ve had them fried at a restaurant and they were yummy but I’m not big on frying things at home. Especially since I run the real risk of burning down my kitchen :P

Thanks, Ivanna! I splurged on it over Christmas and then saw it 50% off right after the holiday :P Starbucks gets me every time!
Breakfast is the meal I look forward to the most! I work out in the AM, and there’s nothing like taking that first bite/sip of food after a good sweat session!

I agree! It’s so gratifying to eat after a good workout. I’m running a half this weekend and the thing I’m looking forward to the most is the finish line followed by brunch :)

Hey! We started the day eating like twinsies! My food was much the same almonds, cottage cheese, orange and salad. You took a different road with the flautas. I had chicken and steamed broccoli! Yours looks and sounds much better! The photo of the orange on the black background is my favorite, very pretty!
